Description
The Ooni Karu 16 Baking Stone is engineered to handle the 510C (950F) heat required for high-volume pizza production. The material is chosen for its thermal mass, which keeps the oven floor hot even during cooking sessions. This high heat retention ensures consistent results for every order during a busy shift.
The custom dimensions are tailored specifically for the Karu 16 & Karu 2 Pro models to maximize the 16″ baking surface. Because cordierite is naturally porous, it pulls moisture from the dough upon contact. This process creates the crispy base and charred texture that characterizes authentic stone-baked pizza in a commercial setting.
Maintaining these stones is straightforward for operators since they are designed to be flipped to burn off organic debris. This set serves as a vital replacement part. Having fresh stones ensures your equipment continues to meet food safety and performance standards during outdoor events.
